Swedish Hash (Pyttipanna)

Pyttipanna means "small pieces in pan" in Swedish, and is a dish made with diced leftover meat from a previous meal combined with diced potatoes and onion and topped with a fried egg. This is an easy weeknight leftover meal, made in under 30 minutes with few ingredients.



 

For the Hash: (About 6 servings)


Large drizzle of olive oil

1-2 pounds leftover meat (I used leftover roast beef), diced

1 large onion, diced

6 oz petite potatoes, diced

3/4 teaspoon salt

3/4 teaspoon pepper


Fried eggs for topping


 

Technique:


Heat oil over medium-high heat.


Add potatoes and cook for 10 minutes turning frequently in pan. Add 1/4 teaspoon salt and 1/4 teaspoon pepper.


Add onion and cook another 5 minutes stirring frequently. Add 1/4 teaspoon salt and 1/4 teaspoon pepper.


Add meat and cook another 5 minutes stirring frequently. Add 1/4 teaspoon salt and 1/4 teaspoon pepper.


Turn off heat.


Plate hash and top each serving with a fried egg and enjoy.
