Roasted Pork Loin

A simple pork dinner does the trick for an easy weeknight meal. Delicious, reasonably priced and oh so tender, this cut of meat works with any side dish. A straightforward technique makes a satisfying and flavourful dinner.

 

For the Pork: (serves 6)


2.5 lbs pork loin

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon salt

1 teaspoon pepper

1 tablespoon olive oil

oil for pan



 

Technique:


Preheat oven to 450 degrees. Heat an oven proof pan with oil on medium high.


Cut loin into 6 even pieces. Rub with olive oil and spices. Brown meat in pan on all sides, for a few minutes on each side. Turn off stove and transfer pan to oven.


Bake for 12-14 minutes depending on desired doneness. Remove from oven and place meat on a cutting board. Cover with foil and let rest for 10 minutes.


Slice and serve.
