An easy, delicious, vegetable side dish that is a go to for me any night of the week. Full of nutrients and basic ingredients, this roasted asparagus is simple and satisfying.
For the Asparagus: (serves about 4)
1 bushel asparagus
1 tablespoon olive oil
1/4 teaspoon salt
1/4 teaspoon pepper
Technique:
Preheat oven to 425 degrees and line a rimmed baking sheet.
Remove woody ends of asparagus by snapping bottoms of stems at a natural point.
Toss on baking sheet with olive oil, salt and pepper. Line asparagus evenly across pan.
Bake 12 minutes.
