A delicious and puff pastry recipe that's buttery, flakey and easier to make than you think.
For the Puff Pastry:
1 recipe Simple Tart Dough
1 stick cold unsalted butter
Technique:
Roll out tart dough into a large square on a lightly floured surface.
Wrap butter in plastic wrap, and use a rolling pin to beat butter into a flat disc. Unwrap butter, fold over, re-wrap and beat again. Repeat two more times.
Place butter disc inside middle of tart dough and fold over all edges into center. Roll out dough into a larger square and "letter fold" (bottom third of pastry to middle third, then top third down). Chill about 30 minutes.
Roll pastry again and fold back into a square. Chill about 30 minutes.
Roll pastry one more time and "letter fold" into a rectangle and chill 30 minutes.
Pastry is ready to be used as a pastry.
