When you are craving pizza but not the carbs, this easy one pan weeknight meal satisfies all your taste bud needs.
For the Pizza Stuffed Chicken:
2 boneless skinless chicken breasts
1/2 cup shredded mozzarella cheese
handful of pepperoni slices
olive oil for chicken
1/2 teaspoon salt
1/2 teaspoon pepper
Jar of your preferred tomato sauce
Technique:
Preheat oven to 425 degrees. Line a rimmed baking sheet with foil.
Create a hole in the chicken breasts by slicing into the side middle of breast with a knife. Line the hole with pepperoni slices and then fill with 1/4 cup of cheese per breast.
Rub both sides of stuffed breasts with olive oil and salt and pepper. Place on baking sheet and bake for 30 minutes.
Remove from oven and serve with tomato sauce.
