An easy one pan lunch or dinner, this is a crave worthy peanut butter dish that is as satisfying as it is delicious.
For the Peanut Butter Sauce:
3 tablespoons peanut butter
1 tablespoon apple cider vinegar
2 tablespoons ketchup
3 tablespoons low sodium soy sauce
1/4 teaspoon onion powder
1/4 teaspoon garlic powder
1/4 teaspoon salt
1/4 teaspoon pepper
1/8 teaspoon turmeric
2 tablespoons water
For the Chicken:
1.5 pounds boneless skinless chicken thighs
1/2 teaspoon salt
1/2 teaspoon pepper
Technique:
Preheat oven to 425 degrees and line a rimmed baking sheet with foil.
In a bowl whisk all sauce ingredients together with a fork. Reserve half of the sauce.
Salt and pepper chicken thighs on both sides and then dip into peanut butter sauce coating thoroughly. Place onto baking sheet.
Bake for 25 minutes. Remove from oven and serve with remaining peanut butter sauce.
