Chocolate chips and orange zest punch up the classic oatmeal cookie favorite.
For the Cookies: (yields 3 dozen cookies)
1 1/2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon ground cinnamon
1/2 teaspoon salt
3 cups rolled oats (quick or old fashioned)
2 1/2 sticks softened unsalted butter
3/4 cups light brown sugar
1/2 cups sugar
1 egg
1 teaspoon vanilla
zest of 1 orange
1 cup semi sweet chocolate chips
Technique:
Preheat oven to 375 degrees and prepare three large baking sheets, ungreased.
Whisk together in a medium bowl flour, baking soda, cinnamon and salt. Set aside.
Using a hand mixer in a large bowl, or a standing mixer with the paddle attachment, beat butter and sugars. Beat in egg, vanilla and orange zest.
Slowly beat flour mixture into butter mixture. Stir in oats then chocolate chips.
Using a tablespoon, make small balls of dough and place about an inch and a half apart onto cookie sheets.
Bake 9-10 minutes. Cool on cookie sheets for 2 minutes, then remove and let cool on a wire rack.
