Chocolatey, warm, gooey, and personal! A very simple group dessert that's always a crowd pleaser. Completely prepared in just one saucepan on the stove, and baked for only 14, minutes chocolate indulgence is only 20 minutes away.
For the Lava Cakes: (makes 6 individual cakes)
12 oz good quality bittersweet chocolate (60% cacao)
2 sticks unsalted butter
1/2 cup flour
1 cup sugar
2 teaspoons instant espresso powder
1 teaspoon salt
4 large eggs beaten
4 large egg yolks beaten
Technique:
Preheat oven to 425 degrees. Grease a 6-well mini bundt cake pan (six mini cakes), or 6 individual ramekins.
Heat chocolate and butter on medium to low heat in a saucepan, stirring frequently. Turn off heat, and let cool. Whisk in eggs and egg yolks, and continue to whisk for a few minute until batter is smooth.
Add dry ingredients and whisk until smooth.
Pour batter evenly into individual cups and place pan on a rimmed baking sheet. Place in oven and bake for 13-14 minutes.
Remove from oven and let cool only a few minutes. Invert cakes onto desired serving plate and top with whipped topping or ice cream.
