There is nothing more wholesome and comforting than a good slice of meatloaf. Delicious warm out of the oven and possibly even better cold the next day in sandwiches, this well rounded recipe will be hitting all the comfort notes. Serve with salad or vegetables, and white or sweet potatoes.
For the Meatloaf:
2 pounds ground beef (80% for more flavor, 93% for lower calorie)
1 pound ground turkey (93%)
1 large onion, halved and sliced into half moons
1/4 cup worcestershire sauce
1 cup oatmeal (instant or old fashioned)
1 teaspoon salt
1/2 teaspoon pepper
1 teaspoon garlic powder
1 teaspoon onion powder
1/2 teaspoon garlic salt
3 large eggs
Technique:
Line a rimmed baking sheet with foil and preheat oven to 350 degrees.
Mix both meats together in large bowl with hands.
Add worcestershire sauce, oatmeal, salt, pepper, garlic powder, onion powder, garlic salt, and eggs and combine all ingredients until well incorporated.
Form meat mixture into 2 loaves and place on prepared baking sheet.
Cover both loaves with onion slices, placing orderly on top in order to cover entire loaf.
Bake 90 minutes.
Let cool and serve.
