Basil is an excellent herb choice for a versatile pesto sauce. Luscious and green, sweet yet herbaceous, it pairs perfectly with the other nutty ingredients.
For the Pesto:
2 cups basil leaves
1/2 cup parmesan
1/3 cup pine nuts
3 peeled garlic cloves
1/2 cup olive oil
1/2 teaspoon salt
1/4 teaspoon pepper
Technique:
Using a blender or food processor, blend basil, parmesan, pine nuts, garlic, salt, and pepper until combined. Slowly stream in oil (or add in small amounts) while pulsing.
Remove from blender and store in the refrigerator or use immediately.
